Miso Roast Aubergine with
Vegetable Rice
This is a family recipe we have developed together over lockdown.
The rich salty taste of the miso and the smokiness of roast aubergine go perfectly together. Top it off with some vegetable rice to serve it with and you have yourself a go-to dish for any night of the week.

Ingredients
Miso Roast Aubergine
2 aubergines, cut in half lengthways​
75g miso paste
2.5cm grated ginger
2 cloves of garlic, crushed
a pinch of chilli flakes
2 tbsp soy sauce
2 tbsp sesame oil
1 lime, zest and juice
2 spring onions, finely sliced

Vegetable Rice
1 onion, chopped
300g rice, rinsed thoroughly
